Ingredients
  

  • 48 oz black beans pre-cooked or canned
  • 1 red onion diced
  • 1 red bell pepper finely chopped
  • 2 jalapeno pepper or to taste, finely diced
  • 2 ears corn uncooked, removed kernels from cob
  • 1 tbsp garlic minced
  • 4 limes juiced
  • 3 tbsp olive oil
  • ½ cilantro finely chopped
  • cups pineapple chopped
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • salt and pepper to taste
  • 1 cup queso fresco or feta cheese, crumbled (OPTIONAL)

Instructions
 

  • Remove corn kernels from the cob. Place in a Large salad or mixing bowl
  • Mix remaining ingredients into the bowl, except for cheese. Refrigerate for 1 to 2 hours before serving to allow flavors to blend.
  • Top with crumbled cheese or serve on the side (optional). Serve with tortilla chips.
